So i go get it all come home and he starts to cook. Let me be the first to say it was AMAZING! he sautéed portabella's, kale, onion, and red peppers. stuffed it all in a large tortilla and fried it. for toppings we had home made guacamole, salsa, non dairy sour cream and non dairy cheese and of course as sides we had beans and rice. i wish i would have taken a picture of this and knew all the steps to how he made it so i could post them but i do not. well my son is trying to toss DVD's at me so i must go! until next time! bye!
I am a stay at home mom, who love to cook! my kids have to be dairy free but i let them eat meat if they want it and my husband and I try and stick to as much as a vegan life style as we can. i live in the mid west and hope to get out of here someday! Until then we make the best of it and just enjoy life!

Portabella Chimichanga's
So i have been wanting some good mexican food, which has been hard to come by being vegan in my opinion, iv never been a fan of just beans and rice and most of the other tasty foods have meat and cheese in them so i texted my hubby yesterday telling him i could go for some amazing mexican food and he bring up portabella chimichanga's and said if i went and picked it all up he would cook.
