- 1/4 cup vegan margarine (soy or regular)
- 1/2 cup unsweetened apple sauce
- 1/2 tsp salt
- 1 cup sugar
- 2 cups of flour
- 1 tbsp baking powder
- 1 tsp vanilla
- 1/2 cup soy milk ( i just used almond because we really don't buy soy milk)
- 2 cups frozen blueberries
- Preheat your oven to 350
- Line your muffin pan with paper liners or spray with nonstick spray
- Mix all ingredients together until moistened
- Divide all batter evenly among the muffin cups, each should be 3/4 full
- Bake foe 35 min or until the tops are firm
- cool on wire rack
Enjoy! i might make this with peaches or raspberries next time!
